Chocolate Chip Cookies

2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (200 grams) butter or margarine, softened
1/2 cup sugar
1/2 cup brown sugar
1 teaspoon vanilla extract
2 eggs
2 cups (330 grams) bittersweet chocolate chips (see note)
1 cup walnuts, chopped

Combine the flour, baking soda and salt. In a large bowl, combine the butter, the sugars, and vanilla. Beat until creamy. Beat in the eggs. Gradually add the flour mixture, mix well. Stir in the nuts and chocolate. Chill for an hour, or store in the refrigerator or freeze if desired.
Drop teaspoonfuls onto an ungreased cookie sheet. Bake 10-12 minutes in a moderately hot oven (190°C / 375°F).
Note: If chocolate chips are not available, make your own using a bar of bittersweet chocolate chopped into pieces about the size of peas.
